Getting in the spirit of Spring, starting to eat more raw foods and healthy treats having dusted off the dehydrator. Your Liver thrives on cooler food and that includes the way you cook – so now is the time to embrace raw, slurp up an abundance of nutrients in juices and smoothies and smooth that Liver energy to help you rise upwards, with force and positivity. Recipe below.
When your Liver it out of balance, it can stagnate and lead to common digestive complaints, anxiety, depression and lingering sinus infections (coughs, colds, headaches etc.), so you may be seeing quite a bit of this around at the minute.
These healthy treats have been made with my patients in mind this week, to compliment their current treatment plan. This is the absolute joy of acupuncture treatments, it’s not simply about the little needles, it’s a dynamic approach to your over all health to create sustainable, enjoyable, positive changes. There are no rigid routines; each treatment is totally responsive to your need as your body changes and as the seasons change.

Recipe
Wash all apples well – no need to peel if you have a powerful blender
Peel the lemon and core apple
Sprinkle in a little cinnamon or spice of your choice
Add all ingredients to a blender and pulse until completely smooth
Roll out on to a dehydrator heatproof sheet very thinly to make it easier to roll – it should spread across 2 or 3 sheets
Slice strawberries very (very!) thinly and place over mixture in whatever pattern you like.
Sprinkle some torn mint leaves over the rest of the mixture
Switch dehydrator to 115 degrees to ensure the healthy Pimms Fruit Rolls remain raw
Leave for 8 hours then remove from dehydrator
The mixture should peel off easily from the heatproof sheet
Cut the sheet in half with scissors then cut in the other direction to make each individual roll. I got 8 rolls out of each sheet.
Tie together with some pretty string and VOILA! Servings: Makes 16 small rolls
- 6 apples
- 1 lemon
- 2 tsp cinnamon
- 4 strawberries (for decoration)
- 3 sprigs of mint leaves (for decoration)
If you don’t have a dehydrator, you can put it on a low heat in your oven for the same amount of time.
The raw treats can be enjoyed up to 1 week after making. Store them in a glass jar with a sealable lid to make sure they stay stay fresh and soft.
